banana orange loaf

I used this recipe as a base- changed up a few ingredients:

Dry Ingredients

* 2 cups wholemeal spelt flour
* 1 teaspoon cinnamon, ground
* 1 teaspoon baking powder
* 1 teaspoon baking soda


Wet Ingredients

* 3 ripe bananas, mashed
* 2 eggs, well beaten
* 1 teaspoon vanilla (pure or extract)
* 2/3 cup pasteurized honey
* 1 tablespoon orange rind
* 2 large oranges, juice and pulp of
* 1 cup rolled oats

Directions

1. Preheat oven to 375°F/190C.
2. Mix all the dry ingredients together in a large bowl.
3. Add all wet ingredients (oats go in at this point..I know they're not wet but whatever) in a bowl and mix. Let this sit for about 5-10 mins to let the oats soak up all the juicy goodness.
4. Add the blended ingredients to the dry ingredients and mix well.
5. Pour mixture into a well-greased loaf pan and place on middle rack in preheated oven.
6. Bake for approximately 75 minutes.
7. Insert toothpick to test for doneness (it should come out clean).
8. Cover the loaf with foil if it is starting to brown too quickly on top.
9. Let cool for 30 minutes and then enjoy.
